Blueberry Ricotta Pancakes

Inspired by the scrumptious blueberry ricotta pancakes at Little Doms that I love so much, we decided to try to make them ourselves using Giada De Laurentiis' recipe.

The recipe calls for frozen blueberries, but I recommend using big fresh ones.
Did I ever tell you that I suck at cooking? I've never really made pancakes before, so my first attempts came out scrambled. Yes I'm calling it scrambled pancakes.
But then we started getting the hang of it by the 3rd try. We also made a very delicious honey syrup to top the pancakes!
Served with fruit & a cup of milk tea! The best part about making your own breakfast is that you can prep it, cook it, plate it, and eat it without changing out of pajamas. BEST.

Wow, I love pancakes. I don't really eat them with fruits, but for some reason this is really changing my mind. It just looks so yummy!
